Ingredients
- 1 lb (450g) large shrimp (peeled and deveined)
- 8 oz (225g) linguine or spaghetti
- 4 tbsp unsalted butter
- 2 tbsp olive oil
- 6 garlic cloves (minced)
- 1/2 cup white wine (or chicken broth for a non-alcoholic version)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tsp lemon zest
- 1/4 tsp red pepper flakes (optional, for a kick)
- Salt and pepper to taste
- 1/4 cup fresh parsley (chopped)
Instructions
- In a large pot of boiling salted water, cook the pasta according to package until al dente. Keep 1/2 cup of pasta water, then drain the pasta and set aside
- Dry the shrimp with paper towels and season lightly with salt and pepper.Take a large skillet and heat the butter and olive oil over medium heat. Add the shrimp and cook for 1 to 2 minutes until it gets pink and paque.
- Take a skillet and add 2tsbp of butter, saute the minced garlic for 1 to 2 minutes until gets fragrant, dont burn it. Pour white wine or chicken broth abd lemon juice. Simmer it for 2 to 3 minutes to reduce slightly.
- Add cooked pasta to the sillet annd toss it nicely in the sauce. let the sauce become thicker to add a splash of the reserved pasta water to loosen it. Pour the shrimp and toss all to combine. Sprinkle with fresh parsly and toss.
